Vegan sandwich filler, I have alfaalfa and smoked tofu what to go with it?

I have pesto, sweet chilli marinade, hoi sin sauce, tikka masala sauce, jalepenos, iceberg lettuce, cucumber, salsa, hot chilli sauce, jam, peanut butter, honey mustard dressing, italian vinagarette, mustard, satay sauce a few other things like that

    (ANS) Here's one I discovered that I REALLY really like.

    MIX together TAHINI (the light runny type, made from sesame seeds) with a few drops of Soy sauce (you can use either Shoyu or Tamari ). Mix in the Soy sauce until the Tahini become stiffer in texture until it becomes a spread. Ah! it changes color abit too in the process. Its LOVELY on bread or gluten free breads. YES! its fully vegan too!! :-))

    PS:- should be kept cold or in fridge once mixed though, use up in a couple of days as it wont keep for long periods.

  3. I would add lettuce, maybe jalapeno, and the pesto sauce (or do you have a salad dressing of some sort? like Italian)

  4. I know this wasn't on your list, but how about avocado or vegan guacamole? Either would be a nice addition, and you probably wouldn't need dressing once you add that.

I know it's not on your list, but I have been all about roasted red peppers on sandwiches lately.  If you have a red pepper around, roasting is really easy: cut in half lengthwise, remove stem and seeds, place cut side down on a foil-lined baking sheet, brush with a little olive oil and roast 20-25 minutes at 425 degrees.  You can leave the skin on, or pop it into a ziploc for 15 minutes or so to steam the skin off.  Yum!  (Then I'd add a little balsamic vinaigrette.)
