Vegan shopping list?

So I'm going vegan, and my mom is going out shopping and then leaving for a trip. So I was wondering, what sort of instant meals should I ask her to get? (Like microwavable ones?--because we're renovating our kitchen.)

They can be mock meat or just yummy veggies. But any of those little box meal suggestions would be great! And ones that are commonly found? Thanks!

  1. the line of "amy's" products are yummy!!

    So are the lifelite "meats"...they make great wraps with some veggies!!

    Get avacados and make guacamole!! Or put them on a sandwich!!

    Don't get too many microwave meals, there are better things to eat than that!!

Amy's has some good stuff--soups, frozen dinners, burgers.  But if you still have use of your kitchen before your mom goes, you might want to cook up some stuff and freeze it for later use.  You can also make peanut butter and jelly sandwiches (or any nut butter) with chips, hummus and veggie pita, and other sammiches.  Make a big pot of soup or chili and freeze it in serving-size portions so you can just pull it out to defrost in the morning and then heat it in the evening.
