Vegan tofu dish that includes black beans and a rich sauce?

I made tofu again tonight and it turned out much better. I was wondering though if any of you make your tofu with beans. I would also love a recipe that includes a rich sauce. Thanks:)

PS- please don't give me a recipe includes meat. I did say vegan and that means I do not consume any kind of animal ingredient (including milk, eggs, actual meat, and animal byproducts.)

  1. Sorry no beans in this one, but it has a nice sauce.

    How about Shiitake-topped Tofu steaks with Hoisin Glaze.  yummmm.  Hoisin is basically an asian barbecue sauce and you can find it near the soy sauce and teriyaki sauces in the supermarket.  I've only made this once but it was excellent. You know how to press tofu properly right? Get as much water out as possible.

    Ingredients

    2 TBS olive oil

    4 ounces shiitake mushrooms, stems removed and chopped

    3 green onions, minced

    2 garlic cloves, minced

    1 inch piece of fresh ginger, peeled and minced

    Salt and pepper

    1 pound extra-firm tofu, cut into 4 equal slices

    1/2 cup hoisin sauce (found in the Asian/International aisle of the supermarket)

    1-2 TBS minced cilantro

    Directions

    Heat 1 tablespoon of the oil in a skillet over medium heat. Add the shrooms, green onion, cilantro, garlic, and ginger and cook, stirring, about 3 minutes. Take off heat and set aside.

    Heat remaining oil in large skillet over medium heat. Add the tofu and cook until golden brown on the first side. Turn and cook for 1 minute longer. Add the hoisin to the pan, spooning it over the tofu to coat. Flip tofu and make sure both sides are covered with hoisin sauce.  Top with cooling mushroom mix.

    Serve and eat.

    Serves 4 as an entree or 2 if your really d**n hungry.


  2. Hot tahini ketchup is pretty good as a richer sauce. It's essentially condensed tomato soup (make sure you buy soup without milk added) on medium heat, a sprinkle of chili flakes, some salt and about 3 tbs of tahini.

    I usually use it as a dip for baked tofu cubes. Marinate your tofu however you like, cube it into bite-sized pieces and flour. Then emulsify lemon juice and oil (use a hand mixer on the oil and add lemon juice a few drops at a time until it's thick, like egg whites) Coat the tofu in the emulsification and then in bread crumbs. Bake at 450°.

    You can have black beans on the side, sautéd with cumin, or make a black bean hummus (substitute for chickpeas) and use it as a dip for pita bread.

  3. Use firm tofu and don't use salt, Add mashed fermented black beans (add slowly and adjust to taste as they can be very salty). You can thicken sauce with tapioca starch

    sorry can't give you a specific recipe as I am not vegan. Just use black beans as a salt/flavoring agent to stir frys.

    Or youc an use non fermented black beans in vegan chili but I think that's not what you are looking for...

  5. Yes, black beans with some thai spices! Yum!  They even have vegetarian refried black beans, they make an awesome bean burritto!!!!
