What are some good vegan volumetric meal ideas?

  1. You need only control your serving sizes of foods that contain fats.  For instance, chick peas, lentils, brown rice, beans and such should be kept to an 1/8 of a cup.  Mix 1/8 cup of a legume and 1/8 cup of a grain and you get an adequate,

    light, low density base for a meal.  Just steam some veggies

    (crunchy, non-starchy) to go along with grain and legume.

    By crunchy I mean broccoli, cauiliflower, carrots, cabbage,

    squash.  Add some veggie broth, or Mrs. Dash seasoning.

    Take two stalks off a bundle of bok choy, two off of a bundle of swiss chard, 1 cup of sliced mushrooms, a diced purple potato, some diced scallions and 1 tsp of grape-seed oil and sautee together. Take 1/8 cup of red seasoned red beans and mix in.

    Volumetric snacks-  A handful of unsalted almonds, or walnuts, apples, a serving of rice chips, raw veggies with hummus.

    Lightly brush a potabella mushroom cap with a tsp of olive oil.

    Grill or broil  and place on a whole wheat bun.  Place tomato

    slices, and spinach on top along with some veganaise or horseradish sauce.  Makes light tasty meal.
