Question:

Vegetarian Antipasto ideas?

I need to make one for a party. So far I have roasted red peppers, sun dried tomatoes (packed in oil and drained), fresh sliced tomatoes, olives, Sliced mild cheeses and crostini type bread. What else should I add?

  1. i am not sure if you are adding something the other ingredients to make a single appetizer.

    i am not sure why you are "marinating" fresh tomato in vinegar--both are acidic. fresh tomato slices with fresh thin onion slices lightly sprinkled with a little good quality olive oil and a few drops of the balsamic, crushed black pepper and fresh basil leaves, will be light and refreshing.

    make a spread with the red peppers, sundried tomatoes, pitted olvies, spice with a little nutmeg and the tiniest bit of curry powder, add a few strokes of grated lemon rind and a bit of fresh lemon juice.

    or if you want something addition:

    eggplant can be either simply grilled or oven roasted in small strips or made into a spread with spices, garlic, and a bit of tomato paste.

    a quick and tasty hummus can be made with chickpeas from a can and add some of those sundried tomatoes, a little oregano and puree in a food processor.

    fresh mushrooms chopped (you can mix white caps, brown caps and maybe a shitake or portobello) saute with some garlic, olive oil and parsley (fresh or dried)

    real easy is a brick of cream cheese, you can pour over it some soy sauce and sprinkle with sesame seeds (toasted) or instead pour some mango chutney over it

  4. I'd do it with rainbow rotini pasta, sliced black olives, chunky Italian dressing, and that jarred stuff that has peppers and carrots and cauliflower (can't remember the name).  I'd also add shredded mozarella cheese and vegetarian salami though I can't remember who makes it.

  5. I used marinated mushrooms on an antipasto platter along with olives, roasted red peppers, cubed cheeses, veggie pepperoni, and focaccia. You could also use giardinera, Peppadew peppers, and small marinated mozzarella balls.

  6. It sounds like you have most everything covered.

    I think a nice little addition would be to take a small tomato slice and a small bit of mozzarella and wrap in a basil leaf.  Hold together with a toothpick. Voila! Individual Caprese Salad rolls.

  7. make mash, and cook loads of veggie to go with it, bind it with breadcrumbs, make like a burger shape and dip in egg and grill, also experiment with polenta, and some cous cous is SO yummy

  8. That sounds good maybe add zucchini, eggplant, and mushrooms.
