Vegetarian Food help?

So i've been a vegetarian for about 2 years. I am still looking for basic dinner recipes to cook? I'm always having the same thing and want something different, that doesn't use too many different foods.

  1. These are my hubby's fav and are served at holidays. They arnt great for you but they are a great comfort food. They are also very easy! If you like biscuits and gravy, you will love this! My meat eating friends love it too!

    stuffed bisquits

    grands jumbo bisquits

    chedder cheese shredded

    equal parts chopped broccoli, carrots, onion and bell pepper

    vegetarian powderd or fresh white pepper gravy

    salt and pepper

    flatten biscuits as much as possible. put enough UNCOOKED veggies in middle but leave edges free. top w/ cheese.  fold bisquit over and use fork to seal. Bake in oven at the temp and time the pkg says for making bisquits. Top w/ the gravy. yummy!

    Ingredients

    1 (15 ounce) can black-eyed peas

    1 (15 ounce) can black beans, rinsed and drained

    1 (15 ounce) can whole kernel corn, drained

    1/2 cup chopped onion

    1/2 cup chopped green bell pepper

    1 (4 ounce) can diced jalapeno peppers

    1 (14.5 ounce) can diced tomatoes, drained

    1 cup Italian-style salad dressing

    1/2 teaspoon garlic salt

    Directions

    In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors.

    Jamie's Minestrone

    Ingredients

    3 tablespoons olive oil

    3 cloves garlic, chopped

    2 onions, chopped

    2 cups chopped celery

    5 carrots, sliced

    2 cups chicken broth

    2 cups water

    4 cups tomato sauce

    1/2 cup red wine (optional)

    1 cup canned kidney beans, drained

    1 (15 ounce) can green beans

    2 cups baby spinach, rinsed

    3 zucchinis, quartered and sliced

    1 tablespoon chopped fresh oregano

    2 tablespoons chopped fresh basil

    salt and pepper to taste

    1/2 cup seashell pasta

    2 tablespoons grated Parmesan cheese for topping

    1 tablespoon olive oil

    Directions

    In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes. Add onion and saute for 4 to 5 minutes. Add celery and carrots, saute for 1 to 2 minutes.

    Add chicken broth, water and tomato sauce, bring to boil, stirring frequently. If desired add red wine at this point. Reduce heat to low and add kidney beans, green beans, spinach leaves, zucchini, oregano, basil, salt and pepper. Simmer for 30 to 40 minutes, the longer the better.

    Fill a medium saucepan with water and bring to a boil. Add macaroni and cook until tender. Drain water and set aside.

    Once pasta is cooked and soup is heated through place 2 tablespoons cooked pasta into individual serving bowls. Ladle soup on top of pasta and sprinkle Parmesan cheese on top. Spray with olive oil and serve.

    Cha Cha's White Chicken Chili

    Ingredients

    1 tablespoon vegetable oil

    1 onion, chopped

    3 cloves garlic, crushed

    1 (4 ounce) can diced jalapeno peppers

    1 (4 ounce) can chopped green chile peppers

    2 teaspoons ground cumin

    1 teaspoon dried oregano

    1 teaspoon ground cayenne pepper

    2 (14.5 ounce) cans chicken broth

    3 cups chopped cooked chicken breast

    3 (15 ounce) cans white beans

    1 cup shredded Monterey Jack cheese

    Directions

    Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.

    Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

  6. Google 'easy vegetarian recipes'. I make Japanese pancakes but only know measurements in metric (not sure what country you are from).

    mix together:

    125g plain flour

    tsp minced ginger

    150ml water

    1 egg or egg substitute

    add:

    150g diced cabbage

    1 large grated carrot.

    mix together in large bowl.

    fry covered (you can do half this recipe at a time) for 12minutes on  low heat. turn over and fry 5-8minutes more.

    serve with HP sauce and mayonnaise. yum

  7. Why are people suggesting recipes that use chicken broth? Chicken broth is NOT vegetarian, people!

  8. There are plenty of vegetarian cook books available.  I like Tofu Cookery and the Enchanted Broccoli Forest.  The magazine Vegetarian Times also has lots of ideas.

  11. im in the same boat as you one of my favorite recipes is lentil tacos really the filling can be used in so many ways. be creative

    # 1 cup finely chopped onion

    # 1 garlic clove, minced

    # 1 teaspoon canola oil

    # 1 cup dried lentils, rinsed

    # 1 tablespoon chili powder

    # 2 teaspoons ground cumin

    # 1 teaspoon dried oregano

    # 2 1/2 cups chicken broth

    # 1 cup salsa

       1.  In a large nonstick skillet, saute the onion and garlic in oil until tender. Add the lentils, chili powder, cumin and oregano; cook and stir for 1 minute. Add broth; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until the lentils are tender. Uncover; cook for 6-8 minutes or until mixture is thickened. Mash lentils slightly.

       2. Stir in salsa. Spoon about 1/4 cup lentil mixture into each taco shell. Top with lettuce, tomato, cheese and sour cream.

    Here are some good recipes:

    Stir fry- You need cut up tofu, soy sauce, olive oil, steamed veggies, and cooked rice

    Get a frying pan and coat it with olive oil. The put the tofu in the pan and brown each side of it. Next, add the veggies. Add a little soy sauce and put in the rice. Mix everything up and then let it sit on the stove, occasionally stirring it to make sure it doesn't burn. After about a minute and a half of that put it in a bowl and enjoy!

    Hummus- chick peas, lemon juice, paprika, cumin, black pepper, and any other spices/seasonings you like

    Puree the chick peas. Then add a little lemon juice, paprika, pepper, and other spices. Then stir. Serve with a pita, with cucumbers, or on a veggie wrap.
