Question:

Vegetarian Green Thai Curry Help Please?

What vegetables would go well? Im buying a ready prepared sauce but want to make a vegetarian one, but stuck as to what veg to put in it? things like broccoli just wont 'go' (IYKWIM)

I dont like Tofu so just veg...was thinking maybe baby corn??...and..........?

  1. Mmmmm, sounds good! Thai curry usually has coconut, coriander and lemongrass in it - so I'd definitely go with sweetcorn and I also love green beans, mangetout/sugarsnap peas and cauliflower (really soaks up the flavour). Courgette is also nice in it - these all have lovely fresh flavours that won't kill the fresh flavour of the sauce.


  2. Why are you buying a sauce - think about the credit crunch. Here is a great recipe for you.

    peas, onions, green beans, sweet corn, aubergines, coriander, kaffir lime leaves coconut milk. garlic, thai fish sauce, green chillies x 3. green curry paste

    pour 400ml coconut milk into a wok , bring to the boil over a high heat

    add the vegetables, garlic and 2tbsp fish sauce to the milk bring back to the boil, lower the heat and simmer very gently for about 20 mins or until veggiers are tender

    remove the veggies from the mixture with a perforated spoon, set aside and keep warm

    stir the green curry paste into the pan, add the aubergines, chillies and lime leaves simmer for 5 mins

    return the veggies back to the wok and bring to the boil, adjusting the seasoning to taste with salt and pepper stir in the coriander and serve with rice
