Vegetarian Meals For A Picky Eater?

So, I'm a very picky eater, but I'm having a hard time being vegetarian just because I'm so picky. I don't like the usual suspects (Brussel sprouts, asparagus, mushrooms), and some veggie meats have horrible squishy soggy textures. I don't have money for tofu. I have veggie chicken, veggie burger, and beans and lentils. Anyone have any ideas for a picky eater?

    Veggies and rice with curry

    Veggie or eggplant lasagna

    Spaghetti- I add chickpeas, onion, and celery, use jarred sauce and add a bay leaf and some oregano.  

    This one is a favorite just because it’s so easy and I have it all the time.  It’s great for lunch.

    Use any canned beans-  pinto, red kidney, cannelloni (white kidney)

    Rinse beans well

    Then add whatever else is on hand-  mushrooms, bell pepper, carrots, squash, zuchinni, broccoli, cauliflower.

    Add enough Italian dressing to coat well and have about ¼ of the mixture sitting in the dressing.  Stick in frig for a couple of hours to soak up dressing.  Perfect easy meal and very nutritious.

  3. What about spaghetti? And if you want, cut up pieces of veggie burger and put it in so the sauce has a more "meaty texture."

  4. any type of pasta is amazing, and you can add whatever you want to it. fruit are also very good. um, rice is also a staple. you could get some interesting breads and try some new sandwich ideas. peanut butter and honey on whole wheat bread is pretty yummy. vegetarian lasagna is also pretty good.

    and just because you're vegetarian doesn't mean you have to go for all those vegetarian meat substitutes, sometimes those just plain suck.

    tea is also very nice.

  5. Vegetarian tacos

    With black beans to replace ground beef(I love black beans and when I have those instead of meat I don't feel like I'm missing out on a thing)

    Chopped tomatoes

    Sour cream

    Shredded cheese

    Chopped romaine lettuce

    Taco Sauce

    Avocado

    Tortilla or a taco shell

    Lots of green salads with olive oil added,anything with berry at the end,pomegrantes,spinach.

    Silk Soy milk is also really healthy and rich in calcium and soy protein. I would guzzle down a couple glasses of that good stuff daily.

  6. salad!! or mac and cheese! Try something more in the grains if you cannot eat meat. Do you eat fish?

  7. I am picky too.  I love bread though.  Like pasta and then pizza, I buy the pizza crusts and then bake it with the toppings.  I like fruit smoothies.  Toast for breakfast. Black beans and rice.  Lentil soup.  Burritos.  Stuff that you can customize and add your favorite stuff too.
