Vegetarian Potluck Dish

I am going to a rather large (at least 100 people) potluck in a couple weeks and wanted to get any ideas on what I should bring, there will be kids, some vegetarians, so no tofu or meat replacement items. I am unsure if I should bring a dessert or a pasta salad....any kind of advice would be awesome. M main concern is getting enough to feed a lot of people and have it not be too expensive.

  1. How about an Asian Slaw?

Use shredded cabbage, shredded carrots, honey roasted peanuts, veggie ramen noodles (raw), tossed with soy sauce, rice wine vinegar, sesame oil,and olive oil. It feeds a crowd and is inexpensive to make!

  2. Roasted vegetables.

    or

    Veggie lasagna works great.

  3. Potato Salad

Potatoes are really inexpensive and you can get a lot of celery and mayo for pretty cheap.  If you wanna do a vegan dish without everyone knowing, use Vegenaise, Nayonnaise or any other eggless mayo.
