Vegetarian Tortilla Fillings?

Ive got to make tortillas at school but im a vegetarian and stuck on what to to put in them. Any ideas?

  1. Here is a recipe from my vegetarian cookbook found on  the website listed below.

    Soft N' Tempting Tacos (makes 10 servings)

    1 1/2 lb.          Tempeh, crumbled

    3C,                  Onion, chopped

    5 oz.                Picante catsup

    2 Tbs.             Chile powder

    4 cloves         Garlic, minced

    2 tsp.              Oregano, dried

    1 Tbs.             Cumin, ground

    2 tsp.              Salt

    1 C.                Water

    2 Tbs.             Canola or Olive Oil

    1.  Heat oil in pan, add tempeh and onions and brown   together.  Add remaining ingredients, lower heat and cook for 10 minutes.  (Moisten with water if mixture is too dry).

    2.  Warm tortilla on flat top grill, turning a few times.  Add the pan ingredients to the center of the warmed tortilla.

    3.  Add "cheese", lettuce,  cilantro and salsa.  Fold and serve with a small salad of shredded lettuce and tomato slice.


  2. any veggie chopped up will  do   with some shredded  cheese if not><><><> just some plain oil will hold em together...

    tasty and presenation looks so good if you cut them in hafe... before eating..

  3. - Vegetarian refried beans (basically without bacon or animal fat), lettuce, onion, tomato, and if you eat dairy, sour cream and cheese, or vegan alternatives if you don't eat dairy.

    - Seasoned black beans with rice and veggies (sautéed zucchini, onion, tomato, maybe).

    - Vegetarian crumbles that are similar to ground beef (you can find them in most stores). Then add to them whatever you would have added to regular ground beef.

    - Vegetarian strips that are similar to chicken or beef strips (you can also find them in the freezer section of many stores - Morningstar has vegan ones, I think). Season, add the usual toppings - either rice and veggies (warm fillings) or cold fillings (lettuce, onion, tomato, cheese, sour cream).

  4. i would put lettuce, tomato, onion, shredded carrot, mushrooms, some bean sprouts and honey mustard dressing. yumm.

    other ideas: avacado or guacamole, sour cream, salsa, shredded cheese, bell peppers, celery, halved grapes, chopped apples, hard-boiled egg, hummus, cucumber, pickle, peanut butter, honey, any salad dressing (italian, red wine or balsamic vinegarette...), fruit spread or jam, cream cheese, toasted nuts, sunflower seeds, spinach, fresh herbs, shaved parmesan cheese, olives, sun-dried tomatoes, chilies, banana peppers, zucchini squash

    ETA: hot sauce, snap peas, toasted ramen noodles, black beans, chickpeas, prepared rice, ricotta or mascarpone cheese, applesauce, broccoli, poppyseeds

  5. You can use TVP (total vegetable protein) which is found in most stores nowadays. I like to re-hydrate it then add taco seasoning. These taste pretty close to ground beef but without all the fat. If you are a fish eating vegetarian, you could always add some baked fish and a cabbage slaw seasoned with cumin, chili powder and lemon juice.
