  1. im vegetarian and do eat eggs,

    but if you're like baking a cake or something that calls for eggs, you can substitute in apple sauce.


  2. Different substitutes do different things.. For cookies and such I use:

    2 tbs water

    1 tbs oil (canola works best)

    1 tsp of baking powder

    It works really well and substitutes for 1 egg.

    You can also use apple sauce or flax seed with a little water. These are sometimes good for cakes (but you can also do without) because they give the cake structure.

  3. Scamble Egg, used firm tofu as mentioned by other.

    Omelete, use chick pea flour as mentioned by other.

    Cake, use tofu or banana

    For some recipes using egg, you can omit it.

  4. Vegetarians eat eggs.  It's vegans that don't eat any animal products.

  5. I'm a vegetarian and I don't eat eggs but I do consume dairy. I sometimes make "California Scramble" I've given it to non vegetarian people and they were amazed at how it tasted like scrambled eggs.

    I just put a little oil in a skillet and crumble some tofu in it after I have rinsed and squeezed out most of the water. Then sprinkle some turmeric over it and add diced onions and mushrooms and when the onion turn transparent add some grated cheese.

    This is good to make breakfast burritos with salsa or  serve with toast or biscuits.
