Vegetarian dish?

Does anyone have a suggestion for a vegetarian side dish that I can bring to a party Friday night. (preferably something easy to make)

  1. Nice vegetables and fruits salad. Dont mix with any dressing. Bring different dressing and honey...a few varieties for them to choose.


  2. Make hummus and serve with pita chips. Google for recipes as I usually make mine up. But basically combine chickpeas, garlic, lemon juice, and sesame oil/olive oil until well blended.

  3. Buy a box of cous cous and make according to package directions. Add 1 cup salsa, 1 can drained and rinsed black beans, 1 can whole kernal corn, drained and 1/2 cup mayo and 1/2 cup chopped cilantro. Chill, stir and serve. This is a favorite for all of my vegetarian and non vegetarian friends. For a Vegan version, use olive oil instead of mayo.

  4. get tortilla chips and you can make a really good dip by spreading sour cream on the bottom, then guacamole,then add a layer of shredded lettuce, then salsa on top and lastly spread shredded cheddar cheese and let it cool in the fridge a little while. Its amazing

  6. great snack, but not side dish-garbanzo beans. drain and wash 2 cans of garbanzo beans. put them in a baking dish, add greek spice (or spice of choice). Bake at 350 for two to three hours, or until crunchy. they'll be the consistency of soy nuts. great crunch, great taste.
