Vegetarian dishes. Ideas?

Hi guys! My bosses are throwing a mini party this thursday and i'm in charge of cooking 2 vegetarian dishes. It's only a small group of people (about 15 people) but only 3 of them are vegetarians. So far, my other colleagues are bringing coconut rice, chicken curry, fried chicken wings, fried egg.... any ideas on what tasty vegetarian dishes i can bring?? Thanks :)

  1. Veggie casserole. Super Easy.

    For a large group:

    2 bags of Egg noodles

    2 bags frozen veggies

    1 can cream of mushroom (condensed)

    1 can cream of celery (condensed)

    1/2 cup Grated Parmesan cheese

    1 cup Shredded mozz cheese

    1 cup Shredded cheddar cheese

    Salt and pepper

    1/2 cup milk

    boil noodles and veggies, then put in a casserole dish and add both cans of soup and the milk- mix well. Add all cheeses and sprinkle salt and pepper to taste. Bake on 300 for about 20 minutes.

    it's soooo good.

    Stuffed Crescents:

    8 crescents

    4 oz cream cheese

    handful of walnuts

    a few tablespoons of honey

    Cinnamon

    unroll the pre-made crescents and mix all other ingredients together in a bowl (except cinnamon). spread evenly on crescents and roll up the dough, sprinkle cinnamon on top and bake as directed on package.

    ETA: the bottom poster s right about Parmesan. Use Horizon brand if you use it. Sorry for not specifying. :)


  2. Zucchini Tomato Pie

        * 2 cups chopped zucchini

        * 1 cup chopped tomato

        * 1/2 cup chopped onion

        * 1/3 cup grated Parmesan cheese

        * 3/4 cup biscuit baking mix

        * 1/2 cup milk

        * 3 eggs

        * 1/2 teaspoon salt

        * 1/4 teaspoon ground black pepper

        

    DIRECTIONS

       1. Preheat oven to 400 degrees F (200 degrees C). Grease a 10 inch pie pan.

       2. Combine zucchini, tomato, onion, and Parmesan cheese in prepared pie pan. In a small bowl, combine biscuit mix, milk, eggs, and salt and pepper. Beat until smooth, then pour over vegetable mixture.

       3. Bake in preheated oven for 30 minutes, or until a knife inserted into the center comes out clean.

  3. Vegetarian pizza. My favorite is zucchini with mushrooms and sweet potato (and garlic sauce)

    Just be sure to cut up the sweet potato real thinly and bake it in the oven first because it will take a lot longer than the other toppings to cook.

  4. Penne ala vodka (make sure the vodka sauce is cheese free..I think Paul Newmans brand is)

    7 layer salad

    Pasta salad

    Cold sesame noodles

    Just a tip, most if not all parmesan cheese is not vegetarian.  It contains animal rennet which comes from a dead animal.

  5. Pasta salads are always good after the pasta is cooked and only cooled a bit use package Italian dressing using only half of the oil,vinegar,and water,apply the dressing to the pasta the night before the add all the veggies you like.
