Vegetarian food ideas, not fried?

I have been cooking for myself for quite a while now, but to much of cooking is fried, so i need some ideas that i can boil, steam, bake, and maybe ferment (i don't like this idea....)

i like it spicy, and i hate to wait (hence why i stir fry a lot!!!) and to clean (one pan or less is nice!!!) tofu is perfered, tempeh i have not tried to cook or eat. i am also cheap, i can cook my lunch and dinner for a day for less then $4 and i don't want to go to far from that.

i am well versed in cooking so there is nothing you can think of that i couldn't cook, but i might not cook any way becuase as stated, lazy and impatient (not going to let something simmer for 4 hours!!!!)

i am cooking for one, but need two servings (lunch and dinner!) and needs to reheat well.

  1. Check out goveg.com where I get many of my recipes.....

I would recommend trying Indian Cuisine, which is pretty easy to make (ideas inclue Korma), is spicy, and is pretty cheap (Veggies, spices, rice)...

Also, I like homemade pizzas, Spinikopita, etc.

  4. If you have a non-stick skillet you can cook most things in water, soy sauce, teriyaki, etc.  You don't have to use oil to fry.

Baked tofu with 3 marinades: http://lowcarbdiets.about.com/od/maindis...

    Sesame Roasted Asparagus:

    Ingredients

1 lb. or 1 bunch asparagus, washed and hard ends trimmed

    2 tsp. sesame oil

    1/2 tsp. salt

    1 Tbsp. sesame seeds

    -Preheat oven to 475 F

-Toss ingredients in a large bowl and then lay them on a baking sheet

-Put them in the oven for 10-12 minutes

Roasted Potatoes (if you want you can just use salt and pepper, the other spices are optional)

    Ingredients

4 medium potatoes, washed and cut into bite-size cubes

    1/4 cup olive oil

    1/2 tsp. salt

    1/2 tsp. pepper

    1/2 tsp. basil

    1/2 tsp. rosemary

    1/2 tsp. thyme

    1/2 tsp. dill

    1/2 tsp. parsley

    1/2 tsp. chili powder

    1/2 tsp. garlic powder

    -Preheat oven to 475 F

-Toss all ingredients in a large bowl and lay mixture, in a single layer, on a lightly greased baking sheet

-Bake for 20-30 minutes until brown and crispy, stirring or flipping ever so often

    Baked Seitan (Wheat Meat):

    Dry ingredients:

1-1/2 cups vital wheat gluten or gluten flour (same thing)

    1/4 cup nutritional yeast

    1 tsp salt

    2 tsp paprika

    1/4 tsp cinnamon

    1/4 tsp cumin

    1-2 tsp pepper (I use 2 tsp)

1/4 tsp cayenne pepper (you can use 1/8 tsp if you like it less spicy)

    1/8 tsp allspice (optional)

    2 tsp garlic powder

    Wet ingredients:

    3/4 cups water

    4 tbsp tomato paste

    1 tbsp tamari

2 tbsp extra virgin olive oil

    2 tbsp vegetarian Worcestershire sauce

    Preheat oven to 325°.

In a large mixing bowl mix dry ingredients. Mix the rest of the ingredients (liquid ingredients) in a smaller mixing bowl. Whisk well until mixed.

Add the liquid ingredients to the dry ingredients. Mix well, then knead for a minute or two.. it doesn't need long.

Form into a log (6-8" long), wrap tightly in foil, twisting ends. Bake for 90 minutes. When done baking, unwrap and leave out to cool all the way. Then wrap it foil or plastic and refrigerate. Slice to use as desired.

If you want something super easy...boil some pasta, saute some peppers, mushrooms, and spinach in a little bit of oil, when softened add marinara sauce and simmer until hot.  Pour sauce over pasta and serve with parmesan cheese or nutritional yeast topping.

  5. You could combine lentils, rice, and steamed veggies and put some soy sauce on top. It is really cheap, fast, tasty, and you can reheat it!

  6. I'm a vegitarian and i like bokha burgers... they heat up in the micro wave and can be reheated. they are stored in the freezer and kinda taste a little like chicken but don't taste like grass (my uncle is just full of it). They also have a lot of frozen soy protein stuff like chick patties witch are really good on a bun or alone and can also be heated up or reaserved.

  7. I wrote this as answers to some other questions, but it applies here too!

Morning Star Farms makes great stuff! It comes in a green box in the frozen food section! My favorite are the chicken nuggets, chicken tenders, and chicken patties! It is called "chicken", but everything is soy meat. It just doesn't sound as appetizing if you say soy tenders! They taste amazing in the oven (or microwave), especially with ketchup!!! They also have stuff like sausage links (soy sausage links), some sort of sesame ginger rice patty, tomato basil burgers, buffalo wings (still soy), and a lot more! People who are not even vegetarian eat this stuff because it tastes great, contain so much less fat, and it is not expensive! These links show you what the boxes look like!

    Remember! Everything is 100% vegetarian!

This stuff tastes better than any other brand!! Try the sausage links with ketchup or one box of something else to see if you like it! I have not met anyone who doesn't like at least 90% of their products! *They turn out better in the oven though!
