Question:

Vegetarian friend... meal ideas?

Heya... well, I've got a friend who's coming over to hang out & stuff... I was wondering if anyone had any good ideas for meals/snacks? (She's staying for a while, so like supper, breakfast, lunch, etc...)

Nobody in my family is vegetarian, so I don't know what to make... (she's just vegetarian, not vegan).

  1. meatless chili, fried eggplant, vegetable egg rolls, bagels and cream cheese, make spaghetti-load er up on the veggies! ( Bell, garlic, onion, chives, Italian herbs, diced eggplant) with a healthy slice of crusty garlic, Parmesan topped bread.

    Roasted vegetables are soo tasty.  put some vegies on a baking sheet-like red bell peppers, onions, tomatoes, carrots-etc, drizzle with olive oil, and roast them for 20 to 30 minutes at 375 degrees.  Ever try polenta?  The major grocery stores sell tubes of polenta usually in the fresh produce area, where you find tofu.  Slice those babies up and put drizzle olive oil and dried herbs over the top, and fry in the pan or bake in the oven.  Get a veggie lovers pizza at pizza hut, or a vegie burger at burger king.  Google falafel, they sell the mix in the ethnic isle, you just mix with water like instant potatoes, roll in a ball, like a hush puppy, and deep fry.  falafel is made out of chickpeas or fava beans.  Sounds strange, put very tasty-just make sure the oil is super hot. Maby pick up a can of artichoke hearts, and olives, their tasty ingredients to have around.  Hummus too.  Don't forget to get some ice  cream.

    Also-try guacamole. It's really easy

    all you have to do is mash up two avocados, dice up half a white onion and one small tomato and one garlic clove, mix it in, squeeze the juice of a whole lime in and add salt to taste. This goes over very well with vegetarians from my experience. (me being one of course!)

  3. It's pretty easy. There are lots of things already prepared in the store that you can get. Veggie burgers, tofu steaks, etc. If you make something from scratch at home, you just need to make sure it is balanced with fat, protein and carbs.

  4. Its really easy. How abut bean and cheese burritos, cheese lasagna made with marinara sauce, spaghetti with marina sauce, just make what you normally would but dont add any meat to theirs.
