Vegetarian lunches for school?

I am a vegetarian and going into 11th grade. I have been a vegetarian my whole life and i don't eat eggs or fish either. I do eat dairy products such as yogurt, milk, ice cream, etc...

My cafeteria doesn't have a microwave and i don't really have time to make anything elaborate.

I usually eat PB and J but it gets kind of old. Something that is quick and easy to make would be nice.

And I'm not a fan of salad..

any other sandwhich ideas?

  1. cucumber and cream cheese sandwich

    tomato sandwich

    grilled cheese(mozzarella) with tomato and basil

    slice an avocado and put salt on it

    bean burrito

    yogurt with granola

    cottage cheese with fruit

    tortilla wrap with your choice of veggies

    bagel and cream cheese( also tastes good with tomatoes, avocado, salt, and pepper on it)

There's already a lot of good cold lunch ideas on here.  You can also heat up your favorite soup (I like Progesso's: Lentil, Hearty Tomato, and Tomato Basil soups) and put them in a warm thermos, microwave your thermos before you fill it and you will have warm soup by lunch time.  You could bring cornbread or crackers or chips to eat with it and maybe some fresh vegetables.

    Other good thermos lunches are: baked beans, chili, refried beans (bring tortillas or tortilla chips), pasta and sauce.  Any soups you like.

    Just put cooked, cooled pasta in the tuppeware and fat free Italian dressing in the dressing dispenser, and whatever else you like in pasta salad can go in too, like veggies or cheese and whatnot.

    I LOVE cucumber and cheese sandwiches with ranch, I'm not sure if someone already wrote that, but it's delicious.

    I also like peanut butter with maple granola and slices of banana.

    I always freeze the bread of my sandwiches and they're perfectly defrosted by lunch.

    I forgot to mention, cold pizza is always good.

    Also, bagels and cream cheese is always delicious, and you could add your favorite veggies to that.

    Take some penne pasta with a garlic tomato sauce and sauteed veggies(zucchini and mushrooms.  It's good cold ( I had it today- leftover from yesterday, took 12 mins to make.)

    (2 fillings between 3 slices of bread ,season to taste)

    Cheese and Cold Meat.

    Corned Beef and Tomato

    Lettuce and Mashed Egg.

    Lettuce  and Tomato.

    Sandwiches. Fillings.

    Asparagus & Mayonnaise.

    Beetroot & Cold Lamb.

    Cheese & Onion.

    Cheese & Vegemite.

  8. i basically grew up a vegetarian, but i'm from a culture that knows how to eat a variety of lentils, beans etc.  we don't make things look like meat subsitutes.  i don't know how much you cook.  some ideas i can give you is some type of lentils or beans on brown rice.  you can add green peas to the rice to make it complete protein.  there are so many soups you can make, such as chick peas, lentil soup etc.  i also make stuffed papusas.  these are made with corn flour stupped with refried beans and cheese.  if you are creative cook start experimenting with different foods.  pb and jelly everyday is not going to give you what you need.  you can try stuffed pita with cream cheese, some vegetables, bean sprouts or alfa sprouts.  if you need some more ideas let me know. i am 46 and i have been cooking since i was 10.

  9. Try skimming through the "vegan lunch box"! The majority is meant for none reheating with some really great ideas. If you still want to add dairy, go opposite of what she would and replace the non-dairy based with dairy versions! I love her creations! And her new revised/ updated book is now available!

    Cucumber sandwiches, which I particularly enjoy, and are good any time of day. You can really use any type of bread, doesn't have to be rye it can just be wonder bread or whatever you use.

    I like to make this sandwich, it was my own idea and I thought it might be gross, but it's good! Very basic.

    Just make a peanut butter and banana sandwich.

    Now in a bowl, mix about 2 tsp of cinnamon, and 1/2 cup of sugar. This will make cinnamon sugar and MUCH more than you need for you sandwich.

    Sprinkle a bit of cinnamon sugar through out the middle of your sandwich, don't put it too much, but put in enough. I'd say like a tablespoon maybe? I think that's about what I put in. Give it a try!!

    Instead of PB & J just start out with a peanut butter sandwich and put fresh fruit in the middle.

    Try some nice bread with a tomato sauce/basil/olive oild spread on each side, with mozarella cheese. Now grill it on a pan. It'll be cold but still good.

    You can always pack more snacks like pudding, gold fish, carrots, cliff bars make a great snack and good for staying full, fruit, pasta salad is great, vegan cookies, hummus is something a lot of vegetarians eat and it comes in different flavors - spread it on bread, crackers, whatever.

    Another idea is

    Get tortillas or pita pockets

    Spread cream cheese or hummus on the tortilla or pita pocket, and fill with your favorite veggies.

    Search online, you'll find tons of vegetarian and vegan recipes, and they aren't all as hard as they look.

Sandwiches like PB and J/etc or tofurkey or lightlife deli slices with tomato and hummus, pita sandwhiches with hummus and tabouli, chicapeas and tomato, basic salad, basic cold/raw soup or stew/gazpacho, pasta salad, quinoa or couscous and beans or lentils with chickapeas, cold soup/gazpacho, roll-ups/wraps/pockets in tortilla with fixins, vegan tuna or vegan egg or potato salad, vegetables with rice, gobi aloo, vegan somen salad or other pasta salad, dumplings, samosas, filled grape leaves, filled vegetables such as zuchnni, small vegan bagel or pita pizzas with cream cheese and veggies. To keep cold lunches cold pack an ice pack, and for hot lunches a thermos or/and heat pack.

    Sides to go with lunch: dried fruits, nuts, vegetables, fruits, applesauce, hard and soft pretzels, homemade chips (potato, kale, tortilla, corn, banana, pita, etc), seeds (sunflower, pumpkin), vegan cookies, homemade bars (like the recipes I gave you in another answer), vegan muffins, vegan brownies, granola, crackers, breads, fries, plantin, trail mix, luna bar, chips or veggies and dip.

    Sandwhich ideas:

    Tofurky or Lightlife deli-slices with hummus, or mustard, or vegan mayo, or other spread, with veggies on sliced bread, sub bread, or pita bread. Or just hummus or vegan mayo or other spread with veggies and/or fruit. Also peanut or almond butter with fruits and/or veggies such as bananas, avocado, apples, strawberries, carrots, cauliflower, broccoli, blueberries, etc. Hummus with shredded carrots and celery with a flour tortilla or pita bread. Falafel with carrots, sprouts and hummus is good. Potato salad or chickpea salad or vegan chicken salad or vegan tuna is good. Tempeh bacon, tvp crumbles, or seitan slices or chunks sand veggie sandwich's. Beans and a spread with sprouts and other veggies on a pita bread is good. Vegan cream cheese with veggies. Rice, avocado and peanut butter. Avocado and lettuce are almost essentials in most of my sandwiches!

Yes!  My sister became a vegetarian when she was 16, and I learned much.  Hummus makes a great pita.  So do falafel sandwiches, with tomatoes and spouts.  Mmmm.  You can also make a cream cheese spreads very easily yourself, using dry veggie soup mix (there are recipes on the Internet, too, and they taste better than soup mix).  There are fake lunchmeats at the supermarket, too, which are GOOD.  Fake bacon BLT's are good without nuking, fake sausage - you could have so much.  Enjoy!  Here's a good cookbook to check out:  The Vegetarian Feast by Martha Rose Shulman.  I started reading it when I was a teenager, and I still love it.  

  15. i have a lot of fake meat sort of things, like today i had vegetarian ham and sometimes for dinner i have fake chicken nuggets. the organic kinds are actually really good!! you should definitley try them.

  16. Try these patties, it's great on a burger bun with some ketchup, lettuce and cucumber ... and the pattie mixture can be frozen if you did'nt fry it  as yet.

    Be careful of the yoghurts, some of them have gelatin and double check the ice cream too and the cheese may have animal rennet.

    Chick-Pea Burgers

    2 tsp vegetable oil

    3 green onions (including tops) chopped – Spring onion

    2 cloves garlic, minced

    1 tsp each dried oregano and chili powder

    1 cup diced sweet red or green pepper and/or ½ cup chopped pickled hot peppers

    Half tomato, chopped

    1 can (19 oz) chick-peas drained and rinsed

    1/3 cup dry bread crumbs

    2 tbsp cilantro or parsley, chopped

    1. In nonstick skillet, heat 1 tsp of oil over medium heat and cook onions, garlic, oregano and chili powder, stirring, for 2 minutes. Add red pepper and tomato. Cook, stirring for about 3 minutes or until pepper is tender and liquid is evaporated.

    2. In food processor, mix pepper mixture with chick-peas; transfer to bowl. Stir in bread crumbs, parsley, and salt and pepper to taste until well combined. Pressing firmly, shape into 4 burgers. ADD BREADCRUMBS UNTIL PATTIE MIXTURE IS MORE ON THE STIFF SIDE, IF NOT IT’LL FALL APART WHEN FRYING.

    3. In nonstick skillet, heat remaining oil over medium heat and cook burgers for 4 minutes on each side or until heated through.

    Serves 4

    You can make this ahead through to step 2 and refrigerate for up to 3 days or freeze for up to 1 month.

    If you don’t want to shape the mixture into burgers, you can omit the bread crumbs, stir it in the skillet and then wrap it in tortillas. Try them with your favourite burger condiments – lettuce, tomatoes, onion, cheese and yogurt are all good accompanyments.
