Question:

Vegetarian meal ideas???

I am a lacto-ovo vegetarian and would like some meal ideas. Sort of on a budget, so nothing really expensive-ish. Something maybe with some side dishes, (fiance likes the whole side dishes thing.)

  1. quinoa is realllly yummy. its a form of pasta but is very hardy and good for you. boil in hot water and add veggies and salt and pepper for a healthful light salad.


  2. Just get those 'instant curry' packs & vegetarian 'meat' to make a simple vegetarian curry. You can fry it first before adding to the curry to give it more crunch. Add fried beans (any type), potatoes, onions, boiled carrots, peas, tomatoes or cauliflower in any combo.

    VEGETARIAN BRIYANI

    (Saffron Spiced Rice with Curried Vegetarian Meat)

    INGREDIENTS FOR RICE:

    31/2 cups Basmati rice,

    salt to taste,

    2 bay leaves,

    4 cloves,

    2.5cm-long cinnamon stick,

    2 Tbs oil to mix into the rice,

    2 Tbs oil for frying,

    1/2 tsp saffron - soaked in

    1 Tbs milk or water,

    10 to 12 cups water,

    some roasted cashew nuts,

    coriander or parsley leaves - chopped.

    PREPARATION FOR RICE:

    1. Wash rice in several changes of water until water runs clear. Cover rice with water and soak for 20 minutes. Drain.

    2. Boil 10 to 12 cups of water in a saucepan. Add the rest of the ingredients except oil and saffron.

    3. Once water boils, add rice and cook for 10 minutes until it is three-quarters cooked. Before draining the water, add 1 cup of tap water. Drain, spread rice on a plate, mix in saffron and oil.

    SERVING:

    1. Heat oil in a wok/frying pan and swirl it around. Add curry and top it with rice. Cook, covered, for 10 minutes over medium heat till it is fragrant.

    2. Garnish briyani with roasted cashew nuts, chopped coriander leaves or parsley.

    My favorite dish, though, is called a Spring Roll Stir Fry. Buy some pre-packaged spring rolls from your grocery store, preferably the name brand Chung's. Then, buy some white rice and make a stir fry using mushrooms, chopped carrots, spinach, soy sauce, and hoison sauce.

  5. I love making wild rice with red lentils and sauted onions. It goes well as a side, or as a main if you add veggies and stuff. Most grains can be bought dried in bulk for economy, and they last for a while! =]

    Fried tofu cubes with Spicy Thai peanut sauce, salad of romaine/cilantro/mint with soy-ginger dressing, fresh/fried/baked spring rolls or egg rolls

    I'm vegan (no dairey or eggs or by products)

    that's all i can think of at the moment,

    i also eat stuffed jacket potatoe skins,

    you cook the jacket potatoe,then scoop out the potatoe and mix with soya milk and veg and other sauces to your liking,these are great at BBQ's or as starters!
