Vegetarian meals????

Ok, we will be driving about 3 hours. I have a cooler to keep cold stuff in. But because we are staying there for 6 days, i would like to bring some of my own food (its a car ride, then staying there) Once we get there we have a refrigerator. But what are some things i can pack in my cooler, for meals like breakfast lunch and dinner, so i won't have a problem with restaurants, and i will have food right there in my hotel. What are good fast and easy things i can make, i also have a microwave. So yea. Any ideas?

  1. Would you have acess to a microwave? Pack cold pastas and couscous and bean salads, couscous, quiona, beans, sushi, sandwhiches, burritos, etc.

    Snacks:

    Dried fruits (apricots, tomatoes, prunes, rasins, etc), nuts (almonds, cashews, peanuts, etc), chips (kale, vegetable, etc), vegetables (artichoke, brocli, kale, cauliflower, etc), fruits (avcados, berries, oranges, watermelon, etc), applesauce, hard and soft pretzels, chips (potatoe, kale, tortillla, corn, banana, pita, etc) sushi, seeds (sunflower, pumpkin,  flax seeds, etc), cupcakes, donuts, scones, cookies, bars, muffins, brownies, pie, cheesecake, mini quesadillas, mini quiches, spring rolls, crackers, breads, falafel,  samosas, stuffed vegetables, lettuce/vegetable wraps, mini potatoes (mashed, fried, baked, small, pizza, etc) mini sandwiches, small salads,  popcorn (air popped, caramel, other flavors, etc), tofu (balls, baked, fried, BBQ, etc), peanut butter and..., small vegan/bagel pizzas, fries, hash browns, potato salad, chili, vegan cole slaw, spicy chickpeas, onion rings, corn nuts, plantin, trail mix, luna bar, etc.


  2. How about some vegetarian sandwiches? Here is a recipe for tomato-spinach rolls:

    Ingredients (for 6 rolls)

    10 oz. Spinach, coarsely chopped

    8 oz. Light cream cheese

    2 tbsps prepared horseradish

    ¼ cups diced tomatoes

    salt and pepper

    6 whole wheat tortillas (7-inch diameter)

    Preparation

    Mix together spinach, cream cheese, horseradish, tomatoes, and dash of salt and pepper in a large bowl.

    Spread the mixture on six tortillas.

    Roll each tortilla tightly.

    Cut each roll into 3 or 4 slices.


  3. The most popular vegetarian meal is tofu. This can be warmed up or refrigerated. Pizza, Vegetables, Artificial Bacon or Meats.


  4. I'm not a vegetarian but I dont eat meat if that makes any sense lol. I pretty much live off cereal, pasta, cheese, chips, bread, pizza, etc. Yeah, I'm not all that healthy lol.

  5. salads that are already made from the market, easy mac, fruit, tomoato soup etc

  6. for the car... pb& j... but 3 hours ain't that far so just eat before you leave and when you get there and bring a snack :)

    easy to make stuff for when you get there.... you can bring a pack of soy meat (burgers, hot dogs, chicken nuggets, whatever) and heat it in the microwave.  frozen mac and cheese.  frozen veggies.  bagels.  peanut butter. cream cheese.  hummus and a bag of veggies.
