Vegetarian noodle recipe using tofu?

i have some tofu in the fridge and im craving noodles so do you have a good recipe i would prefer something that you have tried befoure

  1. Just find a good vegetarian noodle soup recipe on the net or from a cookbook, then de-moisten the tofu by putting it between two kitchen towels and setting a big can on top of it for 30 minutes or so. Cube the tofu, fry it up using some poultry seasoning (it's vegan) and drop it in the soup.

    Close enough? I prefer my tofu fried.

  3. How about try some Pad Thai ?

    12 ounces of dried flat rice noodle 1/4 inch thick

    5 table spoon of peanut or canola oil

    3 eggs, lightly beaten

    4 cloves garlic, minced

    8 ounces of tofu ( prepare however you like)

    2 scallions, trimmed and cut into 1 inch length

    1 cup bean sprouts

    2 table spoon of fish sauce ( or vegetarian fish sauce)

    2 teaspoons of tamarind paste( or ketchup).

    2 teaspoons of sugar

    1/2 cup of chopped peanuts

    1/4 cup chopped fresh cilantro

    2 chillies

    1 lime

    1. Put the noodles in a bowl and pour boiling water over them to cover. Soak until soften ( but don't make it too soft). After the noodle softened, drain them in cold water.

    2. Put 2 tablespoons of the oil in a big pan/skillet. When it hot, add the eggs and scramble until it the eggs become small pieces, transfer it into a bowl

    3 Raise the hit to high and add the remaining oil, when the oil is hot , add garlic, tofu,scallions, and bean sprout and cook, stiring occasionally for 3 minutes, transfer it into a separate bowl

    4. put the drained noodles, egg, fish sauce or vegetarian fish sauce. tamarind( or ketchup) and sugar in the pan and cook, stirring occasionally until the noodles are heated through, then add the stirred fried tofu mixture.Toss once or twice and transfer the contents of the pan to serving platter. Top with the peanuts, cilantro, chiles and remaining bean sprouts. Serve with the lime wedges on the side.

    If you want something simple you can make miso udon noodle

    1> Mix vegetable soup stock with miso base until the soup stock taste salty.

    2 >Pour the soup stock into the pan and turn the heat on medium.

    3 >Add tofu, ginger, noodle, shitake mushroom and heat through, when ready to serve, add chopped scallion.

    ( optional : you can also add daikon radish, minced garlic, sesame oil, spinach.e.g into step 3)
