Question:

Vegetarian school lunch ideas!!?

I don't eat any meat so no meat sandiwches! I can buy fake deli meat though. Can you suggest some low cal, yummy sandiwches i can make or anything else?

  1. You can make a lot of good things at home and bring them to school to eat. Some examples: Peanut butter and jelly, peanut butter and banana, a slice of cheese pizza with veggies on top, a salad with cheese and croutons, pasta with red sauce and no meatballs, fruit salad, cheese and crackers with carrrot sticks, some meatless lasagna, a thermos of veggie soup or veggie soup with pasta and beans, mac and cheese.


  2. you can do a ton with tortillias/wraps.

    I like to use for a dressing, since salad dressings are full of calories...Frenches, Honey Mustard...it's so good, not too tangy or sweet. Perfect.

    I also like balsamic vinegar & oilve oil. Use very little oil though. As much as you want of the balsamic. There are a ton of different kinds of vinegars...like raspberry.

    Yummy- have fun with it. Just remember if something is a bit moist, pack seperate and fix as your ready to eat.

  3. Try making chic pea blends to use as spreads with the smiche's also roasted peppers red is best with a crumbly tofu and crisp lettuce and tomato with cucumber, add some humus and you got a nice smich on hand.  

  4. Cole slaw and fake turkey meat on rye bread.  Yes u actually put the cole slaw in the sandwich.

  5. My daughters love taking Caprese Salad and Hummus with Pita chips to school.

    3 vine-ripe tomatoes, 1/4-inch thick slices

    1 pound fresh mozzarella, 1/4-inch thick slices

    20 to 30 leaves (about 1 bunch) fresh basil

    Extra-virgin olive oil, for drizzling

    Coarse salt and pepper

    Layer alternating slices of tomatoes and mozzarella, adding a basil leaf between each, on a large, shallow platter. Drizzle the salad with extra-virgin olive oil and season with salt and pepper, to taste.




  6. *Zucchini-Raisin Muffins-------Makes one dozen.This is one of our favorite instead-of-a-sandwich muffins. Good accompaniments are a small container of yogurt or a wedge of cheese, plus some fresh fruit. If you won't be using the whole batch within a couple of days, pop some in the freezer for later use. make these simple muffins in the evening, and what a pleasure it is to know that you need only put them in the lunchbox in the morning, instead of making sandwiches!

         1 1/2 cups whole wheat pastry flour

         1/4 cup wheat germ

         1/2 cup natural granulated sugar

         1 1/2 teaspoons baking powder

         1/2 teaspoon baking soda

         1/2 teaspoon cinnamon

         3/4 cup organic vanilla low-fat yogurt or soy yogurt

         2 tablespoons light vegetable oil

         1 cup firmly packed grated zucchini

         1/2 cup raisins

         1/4 cup chopped walnuts, optional

    Preheat the oven to 350 degrees.Combine the first 6 (dry) ingredients in a mixing bowl. Make a well in the center of the dry ingredients and pour in the yogurt and oil. Stir together until smoothly combined. Stir in the zucchini, raisins, and optional walnuts.

    Divide the batter between 12 muffin tins and bake for 20 to 25 minutes, or until the tops are golden and a small knife inserted in the center of a muffin tests clean. Cool on a rack. Wrap well in plastic wrap to send in a lunch box.

    *Fresh Raspberries & Peanut Butter Sandwich

    1/4 Cup   Smooth, Peanut Butter

    2 Tablespoons Raspberry jam,100% pure fruit

    1/2 Teaspoon Maple syrup, 100% pure

    1/2 Teaspoon Vanilla extract

    1 Cup Raspberries, fresh

    Mix together peanut butter, syrup, vanilla and raspberry jam until well blended.Spread nut butter mixture on both top and bottom pieces of bread.Press fresh raspberries into spread.

    Press sandwich gently together (this will keep berries from falling out).

    #Sandwich Options:--Try using other types of nut butters like: almond, or cashew. Mixing in cream cheese to give this recipe a creamer flavor.

    *Grilled Cheese Sandwich---Fresh basil, mozzarella cheese, savory Italian sauce, on sourdough bread... and it only takes 10 minutes to make!

    2   Sourdough bread slices

    1 teaspoon Olive Oil

    2 Tablespoons Tomato pasta sauce

    2 Fresh basil leaves, finely chopped

    1/4 inch slice Mozzarella cheese (low moisture)



    Slice mozzarella cheese in 1/4 inch slice.Finely chop fresh basil leaves.Cut bread in fun shape, using a round cookie cutter.Brush olive oil on the outside of both pieces of bread.Spread pasta sauce on the inside of both pieces of sourdough bread.Sprinkle chopped basil over pasta sauce.Place sliced mozzarella cheese between the two pieces of bread.Grill in cover skillet on low heat for 4 minutes.Flip sandwich over and grill on other side for another 4 minutes in covered skillet on low heat.Remove from heat and let cool before packing it in the lunch box.

    * Vegan Deli Sandwich

    Rye bread or bagel

    Mustard

    Soy mayonnaise

    Veggie deli meats, such as Smoked Wheat

    Shredded lettuce, dairy-free cheese, and/or sauerkraut

    Spread mustard on one slice of bread and soy mayo on the other. Layer the remaining ingredients and wrap up for the lunch box. Pack a pickle too.

    *Humus Wrap

    Pita bread

    Humus

    Sprouts, diced veggies, diced cucumbers (optional)

    Open up pita pocket so you have two circles of bread. Spread humus on the inside of the pita circle and sprinkle the diced veggies on top (if your child will eat the veggies this way). Roll up the pita. Repeat with the other circle of pita.
