Vegetarian slow cooker recipes?

Hey all. I've been wondering if anyone could give me some ideas for some vegetarian slow cooker recipes. I've fallen into a bit of a boring food rut, so any new suggestions would be great.

I'd especially like recipes that are sort of summery--most of the recipes I have (or have looked up online) seem to be more for the winter months (and living where I do, I like to enjoy the few summer months that I get! hehe)

Thanks so much everyone! I'd really enjoy being able to come home from work and not have to worry about dinner!

Oh, PS...I've gone to most of the major websites out there,so actual recipes would be preferred, but if you know of any good websites that I may not have come across, please let me know! thanks again!

  1. im not so sure about websites but i dont know if this wil help.. you can go to the book store and get vegetarian cook books or pasta cook books. alot of the pasta ones dont have meat in it. thats where i get most of my recipes


  2. My favorite thing to experiment with is home-made chilis and stews. Any vegetables you like and any beans you can get your hands on can be diced and tossed in, but the real magic lies in the spices you use.

    You need some good Indian spices for the Indian food you could make in a slow cooker, and you need traditional Mexican spices, and the more spicy stuff the better. And then use unconventional ingredients like cocoa and cinammon - believe it or not, they can make a home-made chili pop like you wouldn't believe.

    That's my favorite recipe website if I want a really quick but very reliable reference site. Don't just copy a recipe - just get inspired by it. Add your own ingredients. Maybe add rice or whole wheat pasta. Try adding seitan or vegan sausage slices. Anything works :)
