I think my fave recipe would have to be Mama's Mock Meatloaf found on www.vegcooking.com. It's delish! I hated meatloaf when I ate meat, but this is really yummy on a cool day. I usually eat it with mashed sweet potatoes and a steamed veggie. Yum-OH!

I think www.vegcooking.com is my fave site for recipes. Veganpeace.com is pretty cool too!

1 whole wheat pita pocket

1 california veggie burger sprinkled with chili powder

tomato

red pepper hummus

pan fry the veggie burger until browned on each side. split pita in half, and fill with a layer of the hummus, then put tomato, then put half the veggie burger in each half. Enjoy...

serve with whatever, from fruit to chips

Taco Salad! ---

Chopped lettuce

Chopped scallions

Chopped onions

Diced tomatos

Salsa

Tofutti brand Better than Sour Cream

1 bag recipe crumbles (fake hamburger), Morningstar Farms or Green Giant brand.

1 packet taco seasoning

1 bag Tostitos

Cheese (optional for the Meat Eaters)

Lay out everything, buffet-style. Heat up the recipe crumbles in a skillet with a little water, add the taco seasoning.

That's all the prep you need. Everyone grabs a plate and loads up. Chips, meat, veggies, salsa/sour cream...whatever your tastes are.
