  1. quorn beef is a gr8 substitute for mince and you can add onions mushrooms and garlic, makes a good burger

  2. BBQ Burgers

    BBQ Burgers yield: 3 burgers

    Ingredients:

    •  1/2 cup walnuts

    •  3/4 cup cooked rice

    •  1/2 onion, chopped

    •  2 tsp. oil

    •  1 Tbsp. vegetarian "bacon" bits

    •  1/2 Tbsp. barbecue sauce

    •  salt and pepper to taste

    •  dash garlic powder

    •  flour

Process walnuts in food processor and pour into a bowl. Process rice

and pour in with walnuts. Saute onion in oil until tender and add to

walnuts and rice along with the rest of ingredients except flour. Add

enough flour to make patties. Refrigerate for 1 hour. Fry in a little oil

for several minutes, turning occasionally. Serve on a bun with barbecue

    sauce and pickles.

    Cheesey burgers

    For the burgers:

    110g fresh breadcrumbs

    4 spring onions, finely chopped

    1 tablespoon chopped parsley

    2 tablespoons chopped basil

    1 teaspoon mustard

    100g mozzarella

    50g grated parmesan

    2 egg yolks

    1 egg

egg wash & breadcrumbs to coat

    To serve:

    8 large flat mushrooms

    1 small iceberg lettuce

    2 tablespoons mayonnaise

    6 new potatoes

    6 small beetroot

    3 baby aubergines

    2 beef tomatoes

    1 yellow pepper

    1 red pepper

    2 medium carrots

    olive oil

Mix all the ingredients for the burger, except the egg wash & breadcrumbs, together in a bowl & divide it into 4 portions, squeezing the mixture into balls. Then flatten them into burger shapes & leave to rest in the fridge.

To make the garnish: shred the lettuce & mix with the mayonnaise. Season. Slice the tomatoes & season. Grill or fry the flat mushrooms, but don’t overcook them as they need to keep their shape. These will act as the burger buns.

Cut the potatoes, aubergines & beetroot into wedges. Cut the pepper & carrots into batons, then cook the vegetables in a frying pan in some olive oil until slightly coloured & soft in the middle. Season & keep warm.

Coat the burgers with egg wash & then breadcrumbs, pressing firmly with a palette knife into shape. Cook the burgers in a frying pan in a generous amount of olive oil, on a medium heat for about 4 minutes on each side. Drain on kitchen paper.

To serve, place a mushroom on a plate with a burger on top, then tomato slices & lettuce. Top with another mushroom & garnish with the vegetables.

    Spicy Vegetarian Black Bean Burger

    INGREDIENTS:

1 15 ounce can black beans

    1/2 onion, diced

1/2 red or yellow bell pepper, diced

    1/4 tsp cayenne pepper

    1 Ener-G egg replacer/or 1 egg

    1 cup bread crumbs

    oil for frying (optional)

    PREPARATION:

Mash the beans in a large bowl and add remaining ingredients, mixing until well combined.

Form into patties and lightly fry in oil. Or, fire up the grill and barbecue your black bean veggie burgers over a medium heat.

  3. Add

--1 cup hot water(or broth of choice)

    to

    --1 cup TVP

then add a few tablespoons BBQ sauce or vegan worchestershire or whatever flavor you'd like to try. Maybe some garlic and/or onion powder.

Stir and then allow enough time for the TVP to absorb most of the liquid. When that has happened, stir in

    --1/2 cup wheat gluten flour

    and

    --1/2 cup soy protein powder

Stir until as much dry ingredient clumps/sticks to the tvp granules as possible. Work this mixture with your  hands and form into patties and steam for 2-3 hours. (the longer the better)

These are not finished until they are barbecued, baked or fried and you have the option of adding whatever sauce or marinade.

    **********

You can choose to add some oil of choice to the TVP in the first step, fry in oil(until lightly browned) or baste with a little oil before baking or BBQing. If you choose to make your burgers fat free, you'll need to use generous amounts of sauce or marinade to keep them moist or they will be rubbery. Ground beef is high in fat so a grain and vegetable burger is probably a better idea than a mock meat burger if you don't want to use even a little fat in your recipe.

The gluten is about 80% protein by weight, the soy protein about 90% protein by weight and the TVP is either 50% or 90% by weight depending on what type you buy(defatted soy flour of that made of protein concentrate), so the fat content is completely up to you and your base calories are mostly from protein.

  4. get some soya mince add minced onions, chilli, peppers, mix it up with gravy or egg and then just make them into burgers and grill them,

  5. VEGGY BURGER

    2 c. cooked brown rice

    1 c. chopped onion

    2 tbsp. minced garlic

    2 tbsp. oil

    1 tsp. dried basil

Saute onions and garlic in the 2 tablespoons oil. Add basil and mix well. Add to rice; shape into patties and brown in 1 teaspoon oil. Serve in pita bread or on buns.

  6. Sorry, no. But I am looking for one as well so I'm going to piggyback your question if you don't mind.
