I was wondering how exactly these two different deposits form within rock. Is it similar to having a pothole and having debris blow into it and it accumulates?

  1. While that is possible.  Most if not all sediments are laid down in a horizontal direction. However due to the activity of Global Tectonics, there horizontal beds can folded, faulted and twisted to where they are now anything from horizontal to vertical.
