Question:

Vietnamese soup like pho, but similar to beef stew?

I'd like to know what it's called. It has a thicker broth with thicker cuts of meat, carrots, and sliced onions. I've seen it with pho noodles, and some other kind of noodles. I recall it being somewhat spicy, too... Anyone had it/ know what it's called?

  2. It's called bò kho, which can be eaten with baguette bread or noodles (the same kind used in phở); in that case, it's called phở bò kho.

    kho=stew

    bò=beef

    the other noodles you mentioned instead of pho is called bun that would be bun bo kho

    im not sure but i think they put less stew and put nuoc mam (fish sauce) in that one thats why it was spicy

Is it more soup-y or more stew-y?  Because there's another spicy noodle bowl called Bún Bò Húe, too.  That's the one that's eaten with noodles, but that one has pig's feet, pig blood and no carrots.  If it's thicker, almost to the degree of being sauce-like rather than a "broth-y" texture, then it's definitely Bò Kho.  That one, we don't eat it much with Phở noodles though, but rather with French baguette.  And no, it's not Núoc Mắm (fish sauce) that makes it spicy (fish sauce by itself is not spicy), but rather chili.  It's the star anise that enhances the aroma.  And does it have potatoes, too?  That's just a personal preference.  My homemade version includes both potatoes and carrots.
