They created graphic designs much like the now  popular Celtic work. They carved, made jewelry,  made decorative drinking horns and holders and flatware,  and in later years, built elaborate wooden churches.

Those Scandinavian and Russians were farmers who went raiding but they didn't go raiding every day.  Some winters they stayed home and found ways to pass the time.
