I've been to Munich and Prague. Interested a little in history, some time for historic walks, cathedrals, museums, but not too much. Always interested in good food, somewhat on budget but willing to splurge sometimes.

  1. I'd reccomend Fairy-tale lane (The area where all the Brothers Grimm had all their fairy tales take place) Sababurg is cool, and Hameln even has a clock that shows the story of the pied piper and self-guided tour that goes through the path he probably used pointing out cool buildings and such.

  2. How about Bingen?  Ruedesheim is right across the Rhine.  The city of Mainz is not far, 30 minutes by train.  Koblenz is also near, about an hour by train.  The Rhine villages of St Goar, Bacharach, Boppard, and St Goarhausen make for a nice visit.  Take a tour of Marksburg castle, most well-preserved castle on the Rhine, by the town of Braubach.  Lots to do in this area for 3 days.
