Visiting the Middle-East?

I'm looking to visit a Middle-Eastern country sometime in the late summer, early fall.

I'm from Canada and I've done some backpacking on my own, mainly throughout Europe, staying at hostels and cheap hotels. I enjoy visiting Museums, art galleries, and wandering the city as I just love the architecture. I generally prefer what the city has to offer more than the landscape, though it really depends on the area. I enjoy all ethnic cuisine and want to experience "culture" rather than be catered to as a tourist.

I'm hoping someone could recommend an interesting place to visit.

Some of the places on my mind - Turkey, Tunisia, Jordan, Israel, Lebanon, morocco, Egypt.

Can anyone share their experiences? Any recommendations or tips?
