  1. 5-1 is way to go.

There will be lots of rotation options under the umbrella of "5-1".

You have to consider how good your backup setter is, and how mobile your primary setter is, to decide which position your setter should start.

You also need to consider which position your hitters like to hit. If all three hitter like to hit high in #4 (left front).

When you talk about 2 “defencers”, are they mainly back row diggers, or are they also good blockers? You need a good blocker staying next to your setter (assuming she is short and will run for setting all the time).

If you believe you have two great hitters that can win the game without too many complicated plays, you can start the setter at p4 (s, left front), primary hitter at #3 (h1, middle front), and a blocker in #2 (d2, right front), so it will be very easy to switch #4, #3 when you serve the first ball, and score immediately without bothering the setter to run that much. Put the second hitter across to h1 at #6 (h2, middle back), third hitter at serving position #1 (h3, right back), and the second "defencer" (or the better blocker) behind your setter at #5 (d1, left back).

  2. To keep the attackers at the net the maximum amount of time, you will probably just have to alternate them with the other positions.  setter, hitter, defense, hitter, defense, hitter

Unfortunately, that will leave you with one attacker on the front row for half of the match.  You will need to work on the back row attacks.

Many teams running a 5-1 start the setter in right front or in the serving position.  It is not a requirement, but it is common.  If you start the setter in right front, you can disguise your first serve receive to make it look like your setter is back row when they are really right front.  And then they can legally dump the ball.  The other team may not block since they think the setter is really in the back row.  If you start the setter in right back, then you will have 2 hitters in the front row.
