Vongole Problem?

Question

I just bought 1 kilo of Vongole for tomorrow evening's dinner. I placed them in the fridge in a cold plastic bag (just as the fishmonger gave them to me) and noticed that half of them were already open.

Does this mean they will not be suitable for eating tomorrow night? I'm having people over and really don't want to give them all a stomach ache :(

Hello Sarah! Open is good.  Its the closed ones that don't open when cooked you should discard.  About an hour before you are to cook them, place them into a bowl of cold water with 2 tablespoons of corn meal.  They will want to ingest the corn meal and will spit out any sand they have in them!
