gelatin is like jello

it comes from a certain kind of sea weed called agar-agar here in the philippines. its collected and the dried and then powdered.

knox is a powder type mixed with hot water then allowed to set, sometimes sugar and any flavouring are mixed with it.

there is also a bar type that is dissolved and cooked in boiling water.

there is also the block type which is a solidified form, it is heated to become liquid and then sugar and flavourings are added before it is allowed to cool and solidify.

great for desserts

Jello has gelatin in it, otherwise it wouldn't be jello.  Jello is the brand name but what you are eating is flavored gelatin.

Generally I think Knox is unflavored, people add it to things they are cooking.

It's not Jello really. Jello is flavored gelatin. Knox is unflavored gelatin, used mostly for preserving or candying fruits and vegetables. If for some reason you wanted to make your own Jello from scratch, or you wanted to make your own homemade raspberry jam, you'd use unflavored gelatin. You wouldn't want to eat gelatin plain, though; it's essentially the clarified bone marrow of horses. In fact you have gelatin inside your own bones, too. If you died, your friends could in theory make gelatin out of your bones.

EDIT: someone gave me a thumbs down because they did not like my answer, but it is the correct one. Gelatin is made of collagen. Products made of agar are not gelatin but gelatin substitutes; the person who told you that gelatin is made from seaweed is either lying or speaking from ignorance. Knox gelatin, which is made by Nabisco and which the question specifically mentioned, is made with collagen from horse bones, or sometimes cow or pork bones. (This incidentally is why it is tough to find Kosher or Halal gelatin.)

Jello has gelatin in it.  Gelatin is what makes the Jello "gel".  Otherwise, Jello is just flavored sugar water, much like Kool-Aid.

Gelatin itself is made from collagen, which is a type of connective tissue found in animals (including us).  Gelatin is usually made by boiling cow bones, especially joints (not horses, as some people claim.)

Gelatin is used in other dishes as well, such as soup, and yogurt.  

Since it is made from an animal,  if you're trying to eat vegan or vegetarian, avoid any product with gelatin in it.
