I would like to think so.

I believe this can happen between people who are very close e.g siblings or good friends.

Although I wish the guy I liked thought about me as much as I think about him lol.

If you have a close connection then yes, this is possible. My partner and I often end up emailing and/or texting each other at the same time saying "I was just thinking of you". It's a really nice feeling!
