  1. There is basically no problem with having one food per meal. There are a number of animals on this planet that only eat one type of food for any of their "meals". Cows pretty much only eat grass for every meal.  However, given the large variety of food items available to the average person there really isn't any "need" or compelling reason to strictly adhere to the concept of only one type of food for any given meal.

    breaky?(breakfast)

Or maybe ceral with water for breaky(cereal)

Needless to say this is an overly broad general isolation.  "Any bread or pastry is the worse (sic) thing you can put in your body.  Methylmercury, plutonium, a 1/2 liter of blood composed of a mixture of 10 CC samples from 50 different people all with HIV and very high viral counts, those are some of the worst things that you can put in your body.

You body needs certain nutrients to study. However, if your eating 6-8 times a day then you can get by with eating only one thing per meal. However by what you stated you're not doing that. So no it is not healthy.

  3. Your body does need variety so that you benefit from all the different vitamins and minerals as well as protein, carbs etc in foods

  4. There's nothing wrong with it....I do it. However.....I do make sure I get protein. Instead of just potatoes I would mix in some eggs or cheese. With the soup (a favorite of mine)....I add some wheat saltine crackers. For dinner I may have a piece of fish or chicken breast. I don't like a lot of food at one meal...never have....I feel overwhelmed. Sometimes...I even will make a large salad and eat it all day. You can do variety....have cereal for breakfast with some sliced fruit in it....a sandwich on whole wheat for lunch, etc.
