I cannot answer for Spain but there are hundreds of those in France. What you are looking for is called a "gîte rural" and more specifically "à la ferme" (located on a farm).  Look on the Gîtes de France website: http://www.gites-de-france.com/gites/uk/...

You can also type directly "gîte à la ferme" in your search engine (preferably www.yahoo.fr or google.fr) to find farms that may or may not be listed on the Gîte de France website, for instance: http://www.metairie-basse.com/

I just typed "farm holidays in France" into Google and got a whole list of good-looking websites with farm holidays available. I think what you need is a "gite" - a holiday cottage -set on a farm and there are dozens of them.
