Generally, the point of an accelerant is that it burns easily, quickly, and at a high temperature.  You want your fuel (wood, coal, etc.) to burn for a long time; the accelerant is just there to get the fire started, and must only burn for long enough to ignite the main fuel.  In general, though, volatile compounds burn more quickly than nonvolatile ones (diesel burns longer than does gasoline, for example).
