Water absorbing capacity of lard, butter, shortening and margarine?

  1. fats or lipids and water are both far opposite things and always repell each other as one is polar and other is non-polar so fats do not absorb water but entrapment may take place if quantity is large


  2. Fats have no capacity to absorb water.

    However depending on % of water in these materials they can be graded as  shortening, lard, butter, margerine with decreasing water content.
