We are planning a trip from Minneapolis to California any suggestions on places to stop?

While I've no specific suggestions for you. I'd had great luck just stopping at the state line at the welcome center, picking up a couple of maps, and brochures for stuff that would be found along our route. Give it all to the kids and let them find stuff they think will be interesting. Also I'd suggest before hand if you know what routes you'll be traveling let them search online for stuff, too.
