  1. Have a contest, see who can eat the most

What about getting a few bottles of tomato ketchup, empty about a quarter from each bottle and stuff in chopped up fresh chillies, or you could get a pound sugar, put it on a low heat on your cooker add six tablespoons of vinegar, add about two pounds of your chillies and four cloves chopped garlic, add four fresh tomatoes for flavour, add chopped bunch coriander and teaspoon turmeric, stir gently without a lid until chili softens, then put in sealed clean jars, use out of your fridge on a cheese sandwich or nice with curry rice, even good to use with spaghetti bolongaise, warning expect to produce a good bit of wind after eating it.

    CHICKEN CHILLIES

    2-3 lbs. cooked chicken

    1 (8 or 10 oz.) pkg. flour tortillas

    1/2 lb. Colby Longhorn cheese, grated

    1/2 lb. Monterey Jack cheese, grated

    1 (4 oz.) can chopped green chiles

    1 can Rotel tomatoes

    1 sm. onion, chopped

    2 cans cream of chicken soup

    8 oz. sour cream

    Jalapenos to taste

    Cut chicken into bite-size pieces. Tear or cut tortillas into small pieces. Mix all ingredients together and pour into a greased 9x13 inch pan and bake in a 350 degree oven for 45 to 60 minutes. Jalapenos may be added to mixture or served on the side.

    GRITS WITH GREEN CHILLIES

    1 c. grits, cooked as directed

    1 stick butter

    1/2 clove garlic or garlic powder

    1/2 lb. grated sharp cheddar cheese

    2 eggs, beaten

    1 sm. can green chilies, chopped

    Add combined ingredients to cooked grits (not too dry). Salt to taste and pour into greased baking dish 11 x 7 inch. Bake one hour 350 degrees. Serves 8.

  8. You could use them to make quite an interesting wine.

  9. Make chilli jam from them and use is as a lovely marinade for chicken, or eat with cheese etc. If you put it in nice jars you can give them to friends as gifts as well.

  11. PICKLED GREEN CHILIES  

    1/2 c. vinegar

    1/2 c. sugar

    1 tsp. salt

    1 tsp. dill seed

    1/2 tsp. mustard seed

    1/2 tsp. mustard seed

    54 oz. cans whole green chilies

    1 clove garlic, sliced

    Bring vinegar, sugar and spices to a boil and simmer 7 minutes to a lightly syrup. Remove seeds from chili and slice into small jars. Add sliced garlic (layering chilies and garlic in jars). Cover with syrup and cover with tight lid. Refrigerate for at least 3 days.

    May be frozen later, but don't fill jars to the top so there is room for expansion when frozen so jar doesn't break. Serve with crackers. Makes 3 small jars.

  13. Do you have a local farmer's market, where you can sell them?

    What about a stand by the road, let your kids run it, for fun.

    You could dry or preserve them, or make chili sauce, etc.

  14. dry them and put them into bottles, you can use them in curries, chillies and to spice up almost any food.
