Question:

We have a grape vine that produces a good supply of white grapes, the first year we made wine

but that was so awful it went down the sink. Does anyone have a recipe that will produce drinkable wine or any other ideas for the grapes.

  1. Pick up a book by CJJ Berry. It doesn't matter which one. All are aimed at beginners. He gives directions and recipes. Mostly, remember that you want only a wine yeast, like Montrachet, acting on your grapes. That means killing all the yeasts on your grapes and keeping the flies out of the must. Sanitation is all-important.


  2. the flavor of the grapes doesn't have a direct link to the flavor of the wine... White grapes can sometimes not have much flavor and if they ferment all the sugar out, they can be very strong.  

    I would suggest adding sugar or another grape juice or concentrate, and then make sure that you use a Campden tablet to stop the fermentation before all the sugar goes, otherwise you with slightly grape-tasting paint remover.

  3. Making wine from your home grapes isn't as easy as it would seem.

    Wine makers today use specialized yeasts to ferment the grapes perfectly. They also make sure their grapes are picked at the peak of ripeness and they use a variety of fermentation containers to add the right flavors. And this is only the beginning....

    Do a bit more homework. It might be worth another try. Good luck.

  4. Making good wine is not easy using just fruit from a vine. I recommend that you mix your grape must with a tin of grape concentrate  - Boots used to sell it - this will give your a much richer and more drinkable wine
