Since you asked this question in Anthropology, you are going to get an answer that deals with this.  Adam and Eve are a story told to people to explain where man came from.  Nothing more.

If you really are interested in figuring out where races came from, I would suggest reading or watching the DVD, "Journey of Man"  Through DNA, man's origins have been mapped.  It is what I believe to be a believable answer to this question.

In brief, man migrated out of  Africa 60,000 yrs ago.  First to Australia, then to India and Asia.  From Asia to Europe and then also from Asia to the Americas.  It has been traced using the "Y" chromosome, as it is the only one that carries the DNA to the next generation.  It is a very interesting documentary.  Here is the link from National Geographic:

There are different races as a result of evolution.  Separated from each other geographically or culturally, different groups evolved slightly differently under both natural selection and genetic drift.  It is more advantageous for people in colder climates to have a more rounded body to maintain body heat, and to have lighter skin (which produces vitamin D).  It is more advantageous to have darker skin for those who are exposed to the sun more to prevent skin cancer.  And of course, there were random changes in frequency of different traits (genetic drift) that help distinguish what we now call different races.

At humanity's very start (how we started is up for debate and doesn't really matter in this case), there were no races.  Racial characteristics developed as adaptations to certain human's environments and distances from other groups/tribes.  For instance, those people who live in hotter, sunnier climates have darker skin and hair than those who live in cooler climates.  The genetic mutations that caused these traits in the first few people continued on in their own tribes.  This is why we have pygmy tribes in Africa and tribes of very tall, slender people (Maasai).  

It is really amazing to me that humans can be so different from each other and yet still have the same sort of insides.

The "stuff" that is in the bible is not factual.   You can't study an anthropological situation based on fairytales and folklore.  I don't think we actually know how or where we evolved.  I do believe the original man got separated into several different "pockets" of civilization.  Based upon the environmental and social factors, he evolved into what he is today.  The Eskimos have several layers of fat to keep them warm.   The people who live in the sun belt have dark skin to protect them from burning.

Obviously you know that there are some assumptions or conclusions that you have to make when considering the story of Adam and Eve.  No one knows how true or untrue the story really is afterall.  There has been evidence that the story of Adam and Eve existed long before the Bible was even written.  This doesn't even count the fact that the story appears twice in the Bible and each is somewhat different from the other.  

However, for the sake of argument we'll make the same assumption.  Even if Adam and Eve were from 2 races and they were truly the dawn of man, that was generations and generations ago by far.  Race is mostly due to our bodies ability to adapt to our surroundings.  People in Arab countries have a nose shape that helps filter out the fine sand in that reagion.  But it wasn't always so arid there.  There is even evidence of a more lush environment during the time of man.  People that have always lived there probably didn't have the same shape to their nose in those days.  It is the same with skin color.  People whose ancestors were originally caucasians that migrated to warmer climates 1000 or more years ago, now have darker skin to filter out the sun's rays.

Now, I can't say it's all environmental.  Some of that has to do with human selection too.  I find that I lean toward caucasians with dark hair and blue eyes.  This is just what I find to be more attractive to me.  Some physical attributes are more desired in certain regions of the world.  And there are also genetics to consider.

Generally speaking though, our bodies adapt if we give them the time to do so.

Ummm...our earliest ancestors can be traced to Africa.  Hunter-gather societies became nomadic (some even turned into actual herding societies), and settled in different regions of the earth.  Obviously race is a function of climate,  Ever notice darker skinned people live on and around the equator?
