The person taking us isn't very outgoing and would have us vacation by the hotel pool if he had his way about it. So we want to set up our own "To Do" list before we go. Any information would be appreciated.

www.allaboutguadalajara.com is an excellent site.  I used this to learn about the city when I was going there to study. They have tons of info.
