sweet glossy textured white rice cake. does anyone know the recipe?

  4. I'm not 100% certain what that is but here are a few really good rice cake recipes.

    MYMU'S  WHITE  RICE  CAKE

    2 1/2 c. flour

    2 c. brown sugar

    1 c. buttermilk

    3/4 c. margarine, softened

    3 eggs

    1 tsp. baking powder

    1 tsp. baking soda

    1 tsp. vanilla extract

    1/2 tsp. salt

    1 tsp. cinnamon

    1/2 tsp. nutmeg

    1/2 tsp. ginger

    2 c. cooked white rice

    1 c. chopped nuts

    Confectioners' sugar

    Preheat oven to 350 degrees.  Grease and flour Bundt pan.  Mix all ingredients except rice and nuts together.  Mix at low speed for 3 minutes.  Then beat at high speed for 3 minutes.  Mix in rice and nuts.  Pour into pan.  Bake 55-60 minutes.  Cool 20 minutes.  Invert on plate.  After completely cool, sprinkle with confectioners' sugar.  

    STEAMED  (RICE  CAKE)  p**o

    2 c. rice soaked in 1 1/2 c. water

       overnight*

    2 tsp. baking powder

    1-1 1/2 c. white sugar

    4 egg whites

    2 tbsp. sugar for egg whites

      *You may use long grain or Calrose, the later may require more water  In a heavy duty blender, puree soaked rice in water until very fine. Pour in a bowl; add sugar and 2 teaspoons baking powder.  Mix well and set aside.  Beat egg whites until stiff.  Add 2 tablespoons sugar to keep the air in the beaten egg whites.  Fold the egg whites into the  beaten rice batter and pour into muffin pans.  Steam for about 20 minutes or until done.  Optional:  Sprinkle a few anise seeds on top of the p**o. Serve with grated coconut.  Note:  You may use basket steamer in a wok half filled with water.

    SWEET  RICE  CAKE

    1 lb. sweet rice flour

    1 1/4 c. sugar

    1/4 lb. butter

    3 eggs

    3 c. milk

    2 tsp. vanilla

      1.  Medium speed beat all above ingredients for 2 minutes, then add 1 cup     walnuts or raisins or 1/2 cup walnuts and 1/2 cup raisins.  2.  13x9x2 pan or tube pan at 350 degrees.  Bake for 50 minutes to 1 hour or     until done.
