Liverystable.net's Events Calendar has most of the big ones:

You can scroll down and just look for CA for the ones in your area.  For instance, July 17-20 is the Wrangler Pro Rodeo in Salinas, CA.  Click on it, it should have a link or contact info where you can find out more.

For smaller local rodeos/shows, you might use a google search for your area and see what you get.

Using google, I found a link to the Bay Area Equestrian Network's Event Calendar for July:

Just look for sites like that in your area, if that's too far from you.

umm if your local pony club has a website they usually show where about and when gymkana's and rodeo's are taking place.

Here is the 2008 Professional Rodeo Cowboys Association schedule and I see two rodeo events listed for July in California, one July 17-20 in Salinas and one July 25-26 at the Sonoma County Fair in Santa Rosa.

Its hard to say. How much do you want to travel? Because in SoCal there is a few stables here that have some fun Rodeos and Gymkhanas. E-mail me if you want the list of them. lol
