Turkey is a classic. In Mexico they make different types of moles which go with different foods. They are all elaborate sauces.

Mole' Goes with just about anything. I have had it with Chicken, Beef, Pork. I don't think it goes with any seafood.

I love chicken mole. It is one of my favorite foods. You can probably use it with beef or pork as well as chicken.

Traditionally the dish was served with Turkey. Pieces of the turkey are simmered in the Mole sauce; the thigh or breast until done. With Turkey is is called Mole Poblano.

You can use chicken or pork. I've even seen fish cooked in it if it is not too "fishy" tasting.

The usual accompaniment is Maize Pololero (white Hominy) and steamed white rice.

The sauce is famous because it contains chocolate as well as many toasted seeds, herbs and roasted Chile peppers.
