What're the average dimensions of skis?

Depends (as stated before) on height & weight, but also on where you will ski and the type of snow you expect to ski.  

For length, it's based on skier ability, weight and height.  Most experts will ski between 175-185 cm.  Beginners will be on 140-150.  Lengths used to be much longer (by about 20 cm), so using older skis is not advised.

For width, it's based on regular snow conditions.  Ice or hard-pack, go narrow (<70 mm).  Soft snow, go mid-fat (65-85 mm).  Powder, strap on the waterskis (85 mm+).  Again, widths used to be much narrower, so using older skis is not advised.

Talk to a reputable shop in your area, or better yet, rent until you know what you're comfortable on.

What kind of skis?  Alpine or nordic?  

Nordic are also called 'cross country'.  Alpine are downhill.  

There are different types of alpine skis as mentioned before.  Some are longer and wider for stability while screaming down at over 70 mph and some are shorter and narrower to dodge between gates.  

Try looking at Nordica, Atomic, Rossignol, Head, Salomon web sites.  They are some of the bigger ski makers.

There is no "average" for width among all skis. You'd have to see what the average width is for All-Mountain Skis, and the average width for powder skis, and the average width for GS skis...etc. etc.

Length is a little easier to figure out. As most people average about 135-150 lbs...the average...or most popular length, lies somewhere between 160cm and 170cm. It used to be longer, but shaped skis have changed that.

This would be a best guess done with some fuzzy math. The only way to really get good numbers is to sample 100 skiers to get their ski dimensions.
