What's a fancy (proper) name I can put on a menu for coffee with coconut milk?

Cafe con Coco. Just make sure that they know that it's a coffee drink, because the coco part suggests that it's hot chocolate.

Your choices are fine. If this mexican restaurant is in the US, then a literal translation will seem fancy... such as café con leche de coco, but this is really too long. I like 'Cafe con Coco' as you suggested. I vote for yours :)

Cafe con Coco..........but they might think it's more of a cocoa drink than a coconut drink. Sounds great though.
