  1. the easiest is to bring a pot of water to a boil. Add sliced onions and garlic. Dissolve some tum yum paste into the water. You may use some herbs such as ginger, galanga root, lemon grass for extra flavour. Pour in a can of coconut milk. Bring to a boil. Add chicken dices or shrimps. Cook for 3 min then add slices of bamboo shots, carrots and mushrooms. Cook for another 2 min and serve. You can also cook it froms scratch but that will take a lot longer to explain.

    Dice white fish fillets

    1 can coconut cream

    chopped onions

    chopped garlic

    Lemon juice

    Salt and black pepper

    Mix and chill.

    Jamaican Ginger and Coconut Soup

    Ingredients for 4 servings

    - 1 tbsp. oil

    - 1 large onion

    - 2 cloves of garlic

    - 1 - 5 cm (2") piece of ginger

    - 250 ml (1 cup) coconut cream or 1 can of good quality

    - 1 liter (4 cups) vegetable stock (homemade or from a cube)

    - 1/4 tsp. allspice

    - 1 tsp. soy sauce

    - A dash of Tabasco (optional)

    - Salt and freshly ground pepper

    Garnish

    - Green onion

    - Paprika

    Method:

    Heat the oil in a large frying pan on a low heat and fry the onion, garlic and ginger until soft. Add the remaining ingredients, except the coconut milk, and stir well.

    Bring to the boil, cover and simmer for 15 minutes, stirring occasionally Stir in the coconut milk and mix well. Leave to cool, then purée until smooth. Reheat to serve and garnish with slices of red or spring onion and a sprinkle of paprika.

  4. I do it the same way as "mrsyuh" only I start with chicken broth and a small can or a couple Tablespoons of Thai green chili paste. I recently tried the yellow chili paste and it seemed about the same...but I didn't have them both there to compare. If you have straw mushrooms available and cilantro to add they are quite traditional...
