  1. Prep Time:

    10 min

    Total Time:

    1 hr 10 min

    Makes:

    6 servings

    1/3 cup KRAFT Mayonnaise

    3 Tbsp.  yellow mustard

    1/2 tsp. paprika

    12   hard-cooked eggs, coarsely chopped

    1 cup green onion slices

MIX mayo, mustard and paprika in medium bowl until well blended.

ADD eggs and green onion; mix lightly. Cover.

REFRIGERATE at least 1 hour before serving.

  2. This is my favorite recipe - it makes one sandwich:

1 hard boiled egg - peeled and diced

    1 rounded Tablespoon mayonnaise

    1/8 tsp prepared mustard

    1/4 tsp curry

fresh ground black pepper to taste

Mix all together.  Butter one side of your bread and place the egg salad sandwich mix on it.  You can add a leaf of lettuce to your sandwich if you'd like.

I have had that mixture on rounds of bread at a 50th Wedding Anniversary.  They served the rounds (bread slices cut with a biscuit cutter) with a slice of Lox over the egg salad mixture.  It was very good.

Hubby likes it with a slice or two of bacon on the bottom but not necessary.

My mother always adds sweet pickle to hers but she doesn't use the curry.  I love the special taste the curry gives to it - I use the curry in my Deviled eggs as well.

  7. hm...i dont have a recipe for egg salad but i have a really good one for macoroni salad that is very very good and sweet and it has eggs in it

ill have to find it though

  8. INGREDIENTS

    6 eggs

    1/4 cup mayonnaise

    1 teaspoon Dijon mustard

    1/2 teaspoon prepared yellow mustard

    1/2 lemon, juiced

    1/4 cup chopped green onions

    salt and pepper to taste

    * I sometimes use Chives instead of green onions. Good with either one!

    DIRECTIONS

Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel. For faster cooling, place the eggs in an ice bath before peeling.

In a medium bowl, stir together the mayonnaise, Dijon mustard, yellow mustard, lemon juice and green onions. Chop the eggs into big chunks and mix gently with the dressing. Season with salt and pepper.

  9. Mine is pretty much the same as Sugar Pie's, with 12 boiled eggs, 2 Tbsp. mayo, about 2 1/2 Tbsp. sweet relish, yellow mustard (a blob the size of a quarter- alter to taste).

One recent addition I sampled that is surprisingly fantastic is real bacon bits.  They add a great flavor and texture.

  10. You're going to need eggs. Boil them for about 8 minutes, plunge into cold water and then peel. Take a LARGE plate. Slice cucumber, tomato and arrange around the plate, add slices of mozzarella cheese, season with salt and freshly ground black pepper, sprinkle with, chopped garlic, olive oil and lemon juice, then add the quartered eggs. Sprinkle these with hot paprika powder and decorate with stoned black olives and some torn basil leaves.

  11. Chop the eggs, add mayo, pepper and chives to taste. Let it set for an hour or two.
