  1. Do you like Thai flavors?

    If so, this is my homemade special recipe!  We call it Magic Noodles in my home.  It is essentially a Spicy Peanut Curry Noodle with veggies and chicken.  Yum!

    I'll try to simplify the recipe for you.

    1 bag of RICE noodles

    2 cups peanut butter

    2 cans coconut milk

    2 tablespoons curry paste (red or yellow is fine -- found in the ethnic section of grocery)

    1 tsp. brown sugar (white sugar is ok if thats all you have)

    1/2 tsp. salt

    1/2 tsp. turmeric

    1 full tablespoon of Thai Chili Sauce (the kind with visible chili flakes)

    8 oz. chicken (or 2 b*****s, or whatever chicken you have)

    Grill or poach chicken.

    Gently melt peanut butter in large pan with coconut milk, stirring often.

    Add in all spices, including curry paste.  Stir stir stir.

    Use whatever veggies you have on hand (I like bell peppers sliced, pea pods, broccoli) and add them to the sauce.  Cover and let simmer on LOW heat.

    Cook Rice Noodles according to directions (about 8-10 mins in boiling water, don't overcook).

    Drain noodles well.

    Pour sauce over noodles and toss together with chicken.

    So flippin' good.


  2. Beef and Broccoli -

    Ingredients:

    1 cup of beef, thinly sliced

    2 tablespoons of salt

    2 tablespoons of soy sauce

    1/2 bunch or 1/2 pound of broccoli, shredded in 3 inch lengths

    2 tablespoons of sugar

    3 tablespoons of oil

    1/2 cup of water

    Directions:

    1. Slice beef thin across grain. Marinate beef in soy sauce, wine and salt. Shred broccoli. Place oil in wok and heat to smoking. Quickly stir-fry beef (no more than 3 minutes). Remove beef to platter and reserve. Add broccoli to wok with 1/2 cup of water and sugar. Turn wok to medium high, cover and cook 6 for minutes, stirring often. After cooking broccoli, add beef and stir well. Place on platter. Enjoy! =)

    Serves 4 to 6.

  3. Once again hoping my ex doesn't mind me sharing his moms recipe. This recipe is to die for I got lots of compliments on it.

    I used beef and the cinnamon which is optional.

    Indian pumpkin curry

    Ingredients:

    ¾             kg pumpkin (could also use butternut squash)

    2-3          medium sized onions (finely chopped)

    3-4          tomatoes

    1              teaspoon garlic and ginger paste

    ½             teaspoon cinnamon powder (optional)

    3              tablespoons sugar

    2              teaspoons red chilli (or to taste)

    1              teaspoon turmeric powder

    1-1½      teaspoon salt (or to taste)

    ½             kg beef/mutton (bite sized pieces)

    ½             cup cooking oil



    Peel the pumpkin and chop into small pieces of 1 to 2 inches. Heat the oil on a low flame and add the onions, frying them until they’re golden brown. Then add the garlic and ginger paste letting it fry along with the onions for a minute. Chop the tomatoes into small pieces (about 4 pieces each) and add them into the onions. Once the tomatoes have dissolved and given off their juice, add the chilli, salt and turmeric powder and stir until they have dissolved too. The beef/mutton should be added at this point and cooked until tender. Then add the pumpkin and fill the dish with enough water to cover the chopped pumpkin pieces. Raise the flame, adding sugar and cinnamon powder, and let the water to evaporate. While the water starts evaporating, the pumpkin should start getting soft. As it does, mash it with some large spoon or ladle so that it forms a pulp and keep stirring after every few minutes. Ready to serve once the oil starts showing on the surface of the pulp. There might still be slight hint of water in the dish which is ok as long as the pumpkin pulp starts looking slightly oily.
