What's a good recipe for gravy w/ soy or some other alternative to meat?

I always make my gravy w/ sweet Italian sausage and mostly lean ground beef, but I really want to make it meatless.

I've tried a handful of soy recipes and a sundry of soy meats and it just doesn't taste the same.

I'm open to any and all suggestions and recipe ideas.

If you are really committed you could try this recipe I found at allrecipes.com it's great! You could add some soy crumbles or soy sausage (Boca makes some great Italian sausage) you could break it up in the gravy. I have done this it's sooo good with biscuits. Best wishes! :)

Tofuky makes a sweet Italian sausage out of soy and Lightlife makes Gimme Lean Gound Beef out of Soy  and frankly they are both quite tasty.
